Made with 100% Merlot grapes from Shiwa Town, Iwate Prefecture. After saignée (a method of macerating the fruit and juice for several hours to several days, then extracting 10% to 20% of the juice), the flavor is extracted through maceration fermentation (fermentation with the skins and fruit together). The juice and skins are then carefully separated to extract the aroma and tannins (astringency) without compromising the flavor before bottling. When you taste it, a fresh acidity and fruitiness spread in your mouth, and you can enjoy a gentle finish. Characterized by the lively acidity produced by Iwate's cool climate, the balance between the abundant fruitiness and light, refreshing tannins is pleasant, making it easy to drink and a taste you won't tire of.
