≪ Introducing Miyasaka Brewing Company≫
Miyasaka Brewery was founded in 1662. The Miyasaka family were vassals of the Suwa family, who ruled this area until the Sengoku period, but were caught up in the conflicts with the Takeda and Oda clans, and put down their swords to become sake brewers.
In 1946, Dr. Shoichi Yamada of the Ministry of Finance's Brewing Experiment Station discovered a new type of yeast, "Kyokai No. 7," in Masumi's sake brewery.
In 2019, we decided to return to brewing sake using our own No. 7 strain yeast, which we rediscovered within our brewery, and we are now producing high-quality sake that pairs well with food, possessing a "calm aroma and harmonious flavor."
