This wine is made using 100% Chardonnay grapes from Ajimu. It features fine bubbles from secondary fermentation in the bottle, refreshing fruitiness, and a crisp finish. After fermentation, it is aged for over a year, and for a month, each bottle is rotated slightly every day to collect the lees (yeast). This meticulous process carefully extracts the delicate flavors and aromas, and the wine is finished with disgorgement (a technique in which the bottle is turned upside down, the lees that have collected around the neck are frozen, and the bottle is quickly opened to dislodge the frozen lees along with the ice).
A vibrant lemon-yellow color with a hint of green. The aroma is complex, with notes of citrus fruits like lemon and grapefruit, fruity flavors reminiscent of green apple, and a savory aroma of toasted bread. On the palate, the effervescence is fine and delicate, the lively fruit flavors spread throughout, and a sharp, crisp acidity and minerality form the backbone of the taste.
