This wine is made using 100% Merlot grapes from Ajimu. Like our flagship wine, Ajimu Sparkling White, it is finished using the traditional method of secondary fermentation in the bottle. It is characterized by its fine bubbles, firm acidity, and subtle sweetness. The wine is produced through secondary fermentation in the bottle and aged in the bottle for over three years to bring out a smoother flavor.
This sparkling wine boasts a bright, orange-tinged cherry pink color and fine, delicate bubbles. It offers subtle aromas of raspberry and blackcurrant, along with hints of pepper and spiciness reminiscent of pink peppercorns. The attack is moderate, and on the palate, the fine bubbles create a balanced blend of soft fruitiness, crisp acidity, light tannins, and pleasant bitterness. This dry sparkling wine leaves a vibrant and rich finish.
