We've packed this gratin with the fresh bounty of the Okhotsk Sea.
Three types of gratin are available: scallop gratin, salmon and potato (Kita Akari variety), and oyster gratin. No artificial seasonings are used.
We use mozzarella cheese from Hokkaido . The butter, milk, and flour are also sourced from Hokkaido .
■ Scallop Gratin
Made with scallops from the Sea of Okhotsk . Decorated with pumpkin paste.
■Salmon and potato gratin
Inspired by Hokkaido's soul food, "Salmon Chanchan-yaki," this dish is topped with a miso sauce that pairs perfectly with salmon and potatoes. We use the sweet "Kita Akari" variety of potatoes.
■ Oyster Gratin
This dish uses one-year-old oysters from Lake Saroma and is topped with plump edamame beans. The white sauce and the saltiness of the oysters go together perfectly.
