■ 52g of flavorful smoked domestic beef
We use rare cuts of domestically raised beef. The meat is cured for two days using the dry-curing method, where salt, spices, and seasonings are rubbed onto the surface, and then smoked with cherry wood chips.

■Crunchy Beef Tongue and Smoked Cheese 65g
This dish combines beef tongue smoked with cherry wood chips from Iwate Prefecture with cheese. The cheese is smoked more intensely than the beef tongue to bring out its flavor even more.

■ Sausage made with pure chicken and basil from Hyogo Prefecture (80g)
We use coarsely ground, whole chicken from Hyogo Prefecture, and add basil, also from Hyogo Prefecture, to create a sausage that offers a delightful texture and aroma.

■Smoked Pork Jowl 60g
This rare cut of pork jowl (from the neck to the shoulder) is smoked using cherry wood chips. It has a crisp texture unlike any other cut. It tastes even better when heated.

■Long-aged salami 35g
It was dried and aged for approximately 45 days, then smoked with cherry wood chips.

■ Smoked chicken gizzards with sansho pepper aroma (60g)
We use domestically raised young chicken gizzards, cut into bite-sized pieces with no tendons, marinated them in a seasoning liquid, and then aged them for approximately 96 hours to bring out the maximum flavor of the ingredients.

■60g of grilled chicken thigh from Hyogo Prefecture
We use chicken thigh meat from purebred chickens raised in Hyogo Prefecture, slow-roasting it at high temperature to lock in the meat's flavor and aroma. By cutting the thigh meat with the skin on, we achieve a satisfyingly chewy texture.
