What is Takekimi?
"Dakekimi" refers to corn cultivated and harvested in the "Dake Plateau," located at the foot of Mount Iwaki in the western part of Hirosaki City, Aomori Prefecture.
Freshly picked "Takekimi" corn boasts a sugar content of over 18 degrees. It's as sweet as, or even sweeter than, melons and other fruits. This sweetness, which makes it edible raw, combined with its popping texture and juiciness, is sure to be addictive!
▶The secret to its sweetness
The Dake Plateau, where "Dakekimi" corn is grown, is a plateau with a harsh climate where the temperature difference between day and night is about 10 degrees Celsius. Grown in this challenging environment, "Dakekimi" corn becomes sweeter and develops a richer flavor.
Furthermore, years of research have been conducted on creating good soil, resulting in a soil rich in organic matter that is ideal for corn, which has made "Takekimi" corn even more flavorful.
▶Who are you?
Tsugaru dialect is the dialect spoken in the Tsugaru region of Aomori Prefecture, where "Takekimi" corn is produced.
In the Tsugaru dialect, corn is called "kimi . " The origin of this name is said to be that it evolved from "toumorokoshi" to "toukibi," then to "kibi," and finally to "kimi."
