To be labeled as "Junmai-shu" (pure rice sake), a brewery must meet several criteria regarding its ingredients and manufacturing process. Specifically, the only ingredients that can be used are rice, rice koji, and water. Furthermore, the rice used must be brown rice graded at least third grade, or equivalent, and the total weight of the rice koji must exceed 15% of the total weight of the polished rice used. Junmai-shu, which is produced under these strict conditions, is characterized by a richer, more full-bodied flavor compared to ginjo-shu and honjozo-shu, and also boasts superior aroma and color. It is also worth noting that it clearly expresses the individuality of each brewery.
