Pazo San Mauro was founded in 1591 and is one of the oldest wineries in Spain.
Since it became owned by Marquez de Vargas in 2003, it has been working to introduce the latest equipment while maintaining traditional manufacturing methods.
Located in Rias Baichaus, the westernmost tip of Spain, we produce wine using the finest indigenous white grape variety "Albariño", which is harvested from our own 30 hectares of single vineyard.
Due to the Atlantic climate, this is the coolest and most rainy region in Spain, so it is in soil and climatic conditions that are ideal for growing thick-pebbled Albariño, which is resistant to humidity.
Furthermore, since malolactite fermentation is not carried out, the characteristics of Albariño, such as fresh, floral and fine acidity, are very well-revealed winemaking.
