純米酒とは
「純米酒」と名乗るには、原料や製造工程に関する複数の基準を満たすことが義務付けられています。具体的には、使用できる原料は米、米麹、水のみに限定されます。また、使用する米は、三等以上の格付けを得た玄米、またはそれに相当するものでなければならず、さらに米麹の合計重量は、使用する白米の総重量の15％を超える必要があります。これらの厳しい条件をクリアして造られる純米酒は、吟醸酒や本醸造酒と比較して、より豊かなコクのある味わいが特徴で、その香りや色合いも優れています。それぞれの蔵元の個性がはっきりと表れることも特筆すべき点です。
