Carefully selected sake brewing rice, Yamada Nishiki, is polished to 32% over approximately 100 hours (4 days and nights). Hand washing rice in the middle of the cold. Carefully prepared Daiginjo Shizuku Sake raw sake is slowly aged at 3°C in a Basin brewery for over 10 years.
