Made with 100% Merlot grapes from Shiwa-cho, Iwate Prefecture. After saignée (a method of steeping fruit and juice for several hours to several days, extracting 10% to 20% of the juice), the wine is fermented in a mash to bring out the flavor, then the juice and skin are carefully separated, and the aroma and tannins (astringency) are brought out, without compromising the flavor, before being bottled. When you put it in your mouth, the fresh acidity and fruitiness spread, and you can enjoy the gentle aftertaste. The wine is characterized by its lively acidity, produced by Iwate's cool climate, and has a pleasant balance of overflowing fruitiness and light, refreshing tannins, making it easy to drink and timeless.
