Mizumoto (Bodaimoto) is a rare method in Japan that uses a brewing method established in the Muromachi period to soak raw rice in water to promote lactic acid fermentation, increasing acidity and brewing safely. It has a soft texture and brings out the original flavor of the rice, giving it a sweet taste, but it is beautiful and has a good balance with the solid acidity.
