* What is new sake*
The first sake brewed using rice harvested this year is generally called ``new sake.'' Although it depends on the quality of the rice that year, each brewery produces excellent sake. This is because new sake has the meaning of predicting the quality of this year's sake, so each brewery puts their whole effort into making it. Unlike standard sake, you can enjoy the fresh flavor, acidity, and youthfulness of this new sake, and it's fun to compare the quality of sake from each brewery.
