This is a three-way cross between Duroc and Landrace (Large Yorkshire and Landrace), and has a fine texture, very tender meat, high water retention, and a moderate amount of fat in the red meat, making it juicy. This peach pork has been pickled in miso.
We are particular about the miso, and use "Kinzanji Miso" made in Okayama Prefecture by "Bizen Miso," a long-established miso brewery in Okayama, which uses domestically grown naked barley as an ingredient. This is a masterpiece that brings out the sweetness, richness, and aroma. Cooking recipes are included.
