
Shimane Wine Sake Yeast Koshu White 720ml
Made with 100% Koshu grapes from Shimane Prefecture. Made with sake yeast (Kyokai No. 9). A very rare white wine made using this. The most common grape variety brewed at Shimane Winery is the Koshu variety (about 100 tons per year). There are only a few major wineries in Yamanashi Prefecture that produce this much Koshu wine by themselves. The goal was to develop a new type of Koshu wine using Shimane Koshu grapes that can compete with Yamanashi wines - a more Japanese wine in terms of flavor and image, and a table wine that goes well with Japanese food. This time, we used sake yeast to create a new type of Koshu wine, hoping to create a wine with a variety of flavors depending on the yeast used. It has a gentle aroma and soft taste without the hardness and astringency that is typical of Koshu wine. It has a sake-like aroma and a light, refreshing mouthfeel. It goes well with Japanese food.
