This flagship white wine is harvested at night when the temperature drops, allowing the grapes' aromatic potential to be fully extracted and reflected in the wine. By using multiple different brewing techniques on highly ripe Chardonnay, we were able to give the wine depth and complexity in flavor. In 2021, we delayed the harvest to October 18th, when the night temperatures were low, allowing us to harvest high-quality grapes with high sugar content. The wine has a rich, deep flavor with a gorgeous oak aroma and powerful taste.
