*What is Hiyaoroshi?*
In the past, heat sterilization before bottled and shipped alcoholic beverages was done by filling a large pot with hot water and soaking the bottles. The temperature of the sake inside reached around 62 degrees Celsius, so the brewer's hands were peeling from the heat. In the fall, the heat eases, and it becomes possible to ``ship (wholesale) cold (as is)'' without the need for heat sterilization. This is the origin of the word "Hiyaoroshi". Its gentle aroma and smooth taste go perfectly with the flavors of autumn.
